This wine is reminiscent of spring. It is true to its style: fragrant and fresh like a ray of sunshine in a glass: white flowers and fruits, citrus fruit, apricot and pineapple. A golden wine perfume, gourmet and joyous. Rich and unctuous Barsac, full of ripe and honeyed fruit with keen, cleansing acidity. Fresh citrus and summer fruits, touches of minerality, delicate fresh flowers, The structures were more or less rich or delicate, but always tense and balanced with fine acidity and bitterness.

FITS TO: Pairs best with Foie Gras in a Tart Sauce where the meaty, rich, buttery food contrasts and balances the sweet wine, or Blue Cheese, Lobster Bisque, Fruit-based desserts, and Spicy Asian and Thai dishes as well

Cyprès de Climens Barsac | Second Wine of | Château Climens

Cyprès de Climens is the second wine of Château Climens. Made from grapes that don’t fit the profile of that particular year’s grand vin, the wines have great richness and power that reflect the estate’s quality.

Phonetically, the best name for any second wine (si près de meaning ‘so close to’), and without doubt the most impressive of the second wines of Sauternes, Cyprès is made in the same exacting way as grand vin Climens, but matures sooner. Hints of apricots and grapefruit on the palate. 2019–2028.

2015 was an excellent vintage for Sauternes and Barsac, with picking starting right at the beginning of September and almost perfect conditions throughout that month and much of October. Favourably timed rain showers punctuated the harvest, ensuring ideal conditions for the development of noble rot, though the wines display admirable balancing freshness.
