AGEING: The fermentations are conducted by natural and indigenous yeasts, in open top barriques (225L) for the smaller parcels. After 7-10 days of maceration, the different parcels are moved into old barriques and barrels for 20 months
GUARDING POTENTIAL: Enjoy now or will cellar well up to 15 years
SERVE: Serve at 16 – 18ºC
FITS TO: Testamatta’s balanced and complex profile makes it a fine accompaniment to a variety of foods. It would pair well with grilled meats, hearty pasta dishes, and aged cheeses
