Juyondai is a premium sake brand produced by Takagi Shuzo, a family-owned brewery located in Yamagata Prefecture, Japan. The brewery was founded in 1637 and has been making sake for over 380 years.
Bessen Morohaku Junmai Daiginjo is one of Juyondai’s most famous and highly-regarded products. It is a top-of-the-line sake made from the finest Yamada Nishiki rice, which is polished to 35% of its original size to produce a pure and delicate flavor. The sake is also brewed with the traditional kimoto method, which involves naturally fermenting the rice and water mixture with lactic acid bacteria and yeast.
Juyondai’s rise to fame began in the 1990s, when the brewery started to experiment with new techniques and methods to produce high-quality sake.
