Colle Ventoso Lambrusco
An intense ruby red color with violet reflections and a creamy purple foam. Vinous scents on the nose with a texture of berries, black cherries together with violets and almonds. Rich palate in which the tannic component prevails which is well balanced with the moderate acidity. Long and fruity finish. Ideal in combination with stuffed pasta such as green tortelli, or meat dishes from simple grilled to more complex preparations such as roast guinea fowl.

Overview | Of | Casali Viticultori
Founded in 1900 by Giuseppe Casali, this 50-hectare estate is located in the of village of Pratissolo, in the Scandiano foothills of central Emilia Romagna. For generations, the Casali family devoted themselves to the cultivation of multiple local clones of Lambrusco – including Marani, Montericco, and Salamino – alongside the indigenous white grape, Spergola, which they also used in the creation of the region’s first Champagne-method sparkler (Ca’Besina) in the 1970s. Today, as then, the focus remains on crafting smooth, intelligent, integrated blends of different Lambrusco clones to help dispel the region’s reputation for quantity over quality and help elevate their own DOP.
Preserving the local vine heritage on the strength of winemaking respectful of its grape varieties and terroir has always been one of the cornerstones of Casali Viticultori’s philosophy. In addition to protecting the great family of varieties making up the complex Lambrusco universe – Marani, Salamino, Montericco, Grasparossa, Montericco, Ancelotta – one of Casali Viticultori’s distinguishing traits is certainly its protection and promotion of the Spergola variety. This native variety’s origins date back to the 15th century, when it was mentioned by Bianca Cappello, Grand Duchess of Tuscany. It is a variety which is grown only in the hills and plains from Scandiano to Quattro Castella and over the years it has been given a range of appellations. Its medium-small grapes and waxy greenish-yellow skin has meant that Spergola was confused with Sauvignon Blanc but more in-depth morphological and genetic studies have demonstrated its distinctiveness and seen it being added to Italy’s Grape Varieties Catalogue.
